Thomas (Mac) McFarland Gregory III

Mac Gregory is the Vice President of Food & Beverage for Pacifica Hotel Company as well as a Certified Advanced Sommelier and Master Mixologist. Gregory is proud to serve as a Beverage Competition judge and he’s a 9-year veteran of the SFWSC and an Advisory Council member of the annual VIBE Beverage Conference. Born in Charleston, South Carolina, but raised on the West Coast, Mac earned a degree in business from Arizona State University. He began his career in the hospitality industry with Club Med Hotels & Resorts International and is currently with the Southern California based Pacifica Hotels after serving as CEO for Saint Marc Holdings in Okayama, Japan. Prior to that, he held executive hotel, resort, and food & beverage roles with Starwood Hotels & Resorts Worldwide, The 5-Star Phoenician Resort & Spa in Scottsdale, Arizona, Hyatt Hotels & Resorts Global and numerous luxury, and lifestyle entities around the world. Mac has developed a plethora of venue concepts and F&B operations and has directed the opening of 26 new build hotels & resorts as well as transitioned hundreds of properties & physical assets during his tenure. Known as an executive senior leader, speaker, educator, columnist, consultant, competition judge and top executive in the international food and beverage community, Mac has moderated over 350 F&B specialty dinners and has hosted many incredible food and beverage events. Gregory is keenly passionate about the hospitality industry and in his personal time, he enjoys collecting wine and spirits, hanging out with his two college aged sons and spending time with his Cane Corso, “Chopper”.
